
(20 minute prep, 40min cook***)
Ingredients
Chicken (1lb)
Canned Artichokes (1 can/lb)
Sliced Mushrooms (1 pkg/lb)
Progresso breadcrumbs
egg (1/lb of chicken)
salt
pepper
garlic powder
oregano
vegetable oil
Chicken broth (~16oz/1lb chicken)
egg noodles*
Preheat oven to 400 degrees.
Scramble an egg into a mixing bowl.
Pour a healthy amount of breadcrumbs onto a large plate.
Take chicken, and pound aggressively with a mallet/meat tenderizer/bottom of a pot. Don't be shy!!! The more you pound the chicken the better it tastes.
Slice chicken into thin pieces, then cut into desired size cutlet pieces. I usually slice thin, and then cut that piece in half.
Coat/lather chicken in eggs so that it is covered, then over the bowl let any excess egg drip off. Then put the egg-coated chicken into the breadcrumbs and cover the chicken completely in breadcrumbs. Put breadcrumb-coated chicken onto another dish. Repeat process until all chicken is breaded.
In a pan, put a healthy amount of oil to cover the bottom of the pan and put the heat on high. Wait a few minutes, then throw a very small amount of breadcrumbs into the pan to see if the oil is hot enough. If the breadcrumbs fizz and bubble, the oil is ready. Put your chicken into the hot oil and then reduce heat to high/medium high. Let chicken cook until bottom is golden brown and then flip onto other side (should be about 4 minutes on each side). Once chicken is cooked, put into a baking dish. Repeat process until all the breaded chicken is cooked and transferred to baking dish.
Open the mushrooms and clean them, then add them to the baking dish with the chicken. Open the artichokes and drain them, then add to the baking dish. Season with salt, pepper, oregano, and garlic powder. Then add enough chicken broth to your baking dish so that it is half full. Cover the baking dish with tin foil.***
Put baking dish in oven, covered, and let it cook for at least 40 minutes (the chicken broth should be bubbling). If you can cook it for longer than 40 minutes, turn it down to 350 degrees and cook for at least one hour.
Make the egg noodles.
Before serving, baste the chicken broth over the mushrooms/artichokes/chicken and mix around.
Serve over egg noodles!
***At this point decide when you want to eat. If you want to eat right away, cook at 400 degrees for 40 minutes. If you can wait, or you don't have a set time, turn your oven to 350 degrees and let it cook for a while(1-2 hours). Just make sure it's covered!
