Pineapple & Arugula Salad

Ingredients

Pineapple

Cherry tomatoes

arugula

romaine lettuce (1 head)

lemon (1)

olive oil

salt

pepper

garlic powder

thyme (fresh or dried)


Cube pineapple.

Cut cherry tomatoes in half.

Chop romaine lettuce.


Add romaine, arugula, pineapple, cherry tomatoes into a serving bowl.


In a measuring cup, squeeze 1 lemon. Add equal parts olive oil to lemon juice. Season with salt, pepper, garlic powder, and thyme. Mix all together.


Pour dressing over salad and mix together.


Serve and enjoy!


*grilled shrimp, chicken, or salmon goes great on top!
