Rigatoni alla Vodka

Ingredients

Rigatoni (1 lb)

olive oil

garlic (2 cloves, diced)

red onion (1/2, diced)

tomato paste (6 oz)

1 cup half and half

2 tablespoon vodka

red pepper flakes

salt

pepper

butter (1 tbsp.)

parmesan cheese (1/2 cup)

Basil (fresh or dried)


Boil a large salted pot of water.


In a large pot, on medium-high heat, add the olive oil, garlic and red onion. Season with salt and pepper. Cook until soft.


Add tomato paste and the half and half. Mix around for 2 minutes, then add in the vodka and cook through. Add 1 tbsp. of olive oil and season with red pepper flakes. Mix for another 2 min.


By now the water should be boiled. Add the pasta.


While the pasta is cooking, add the parmesan cheese to the sauce and mix around until it becomes part of the sauce.


When the pasta is ready, strain almost all the way through, but leave a bit of the pasta water. Add the pasta to the sauce. Mix around, then add the basil. Right before serving, add the butter and mix around until melted.


Serve and enjoy!
